  • 150ml milk

  • 75g soft brown sugar

  • 1/4 tsp mixed spice

  • 1 eggs beaten

  • 225g stale bread broken up into pieces

  • 50g cranberries

  • 50g raisins

  • 300ml water


  1. Preheat the oven to 180C/Gas Mark 4.
  2. Put the bread in a bowl and add the cold water.
  3. Leave to soak for 1 hour.
  4. Drain water from bread and squeeze out the excess.
  5. Mix the bread with the rest of the ingredients.
  6. Pour into an 8” square baking tin which has been greased.
  7. Cook for 75 - 90 mins until firm to the touch and brown on top.
  8. Allow to cool for 30 mins or so in the tin, before cutting into squares.
  9. Serve warm or cold.

    thank you so much for this recipe - i remember my mum making it (though she used to soak the bread overnight) but i never did get the recipe from her. i look forwards to making it now!!!

    This is so easy, and yummy! only critisism was more cinnamon please? really easy to do and you can freeze it really well

    Very easy way to use up bread that you might otherwise bin. You can vary the combination of fruit - I like cranberries but cherries or apricots would do just as well. I used bread rolls the first time but will try next time with sliced bread.
