  • 1 onion chopped

  • 2 tins chopped tomato

  • 1 chicken jointed

  • 1 pinch seasoning

  • 1 tbsp capers chopped

  • 1/2 bottles red wine

  • 1 bay leaves

  • 1 tin black olives chopped

  • 4 cloves garlic

  • 1 pinch dried chilli flakes


  1. Season and fry the chicken pieces, place in the casserole.
  2. Turn down the heat and saute the onions, adding the garlic after a minute or two.
  3. Add the tomatoes, herbs, capers and wine (I use about a pint), bring to a simmer and add to the casserole.
  4. Cook on about 140C for a couple of hours, then add the black olives. Cook for another 30 minutes.

Handy Hint

The longer and slower the cooking, the better! Freezes well - reheat thoroughly after defrosting.
