Fruit and yoghurt bars

  • 4 tbsp natural yoghurt

  • 2 tbsp honey heaped

  • 170g porridge oats

  • 85g margarine

  • 140g dried apricots finely chopped

  • 85g sultanas


  1. Melt the margarine/butter and honey in a saucepan. Transfer to a bowl then mix in all the other ingredients. Add more yoghurt if the mixture seems dry.
  2. Spoon the mixture in to a greased tin 7x7”.
  3. Bake at 170C/325F/Gas Mark 3 for 15-20 mins until firm and golden brown. Cut in to bars and leave to cool.

    YUM! Made these with 6 oz dried papaya, pineapple, mango and apricot (as it's what I had in) and then 2 oz sultanas and raisins (ditto). Had to top up the natural yoghurt (I used Greek) with,er, a Mullers little star - strawberry flavour - as had run out. Still yummy and great way of making treats with stuff out the cupboard!
