Thyme roasted chicken with mediterranean vegetables

  • 1 yellow pepper cut into 1 inch chunks

  • 1/2 butternut squash diced

  • 1 red pepper cut into 1 inch chunks

  • 3 cloves garlic

  • 2 sweet potatoes diced

  • 2 small red onions quartered

  • 4 chicken breasts

  • 6 sprigs fresh thyme


  1. Soften the onions and peppers in a large pan with the garlic, olive oil and some salt and pepper.
  2. Slice the chicken into goujon size slices (4 slices per breast)and add to the pan to brown off.
  3. Place the squash and sweet potatoes onto a baking tray and then add the chicken mixture.
  4. Give it a good shake and top off with the thyme springs.
  5. Place in the oven for 25 minutes at 220C/Gas Mark 7.
  6. Serve this with new potatoes and a nice chilled white wine.

Handy Hint

Check on the dish often while cooking. Don't let the chicken dry out too much (you could cover with foil).

    I love this its a great summer meal which has vibrate colours and tastes
