Low fat apple and blackberry terrine

  • 200g blackberry

  • 15ml clear honey

  • 500g cooking apple

  • 300ml sweet cider

  • 15ml gelatine

  • 2 egg whites

  • 1 handful blackberries (to garnish)

  • 1 sprig mint (to garnish)


  1. Simmer apples with cider and blackberries until tender. Purée them.
  2. Add gelatine. Add honey. Leave to cool.
  3. Whisk egg whites. Fold into puree.
  4. Put in 1.75l/3 pint loaf tin. Freeze until firm.
  5. To serve - turn out of tin onto a plate, leave for 20 mins, serve in slices.

    This is a lovely summer recipe making great use of just ripe blackberries. Blackberry picking is great fun and it's free. This recipe is delicious. I wonder if you could make it with fruit juice instead of cider for a less grown up affair?? It looks great at a dinner party.
