Scrummy potato salad

  • 1 tbsp mayonnaise

  • 1 tin sweetcorn (small, optional)

  • 1 pinch seasoning

  • 1.5kg new potatoes

  • 1 bunch spring onions washed and sliced including most of the green bits

  • 1 bunch fresh chives


  1. Cut any large potatoes into about 1 inch pieces, boil for about 15-20 minutes until just tender.
  2. Drain potatoes and rinse in cold water to prevent cooking further.
  3. In serving bowl large enough to accommodate all ingredients, place drained potatoes, onion and sweetcorn if using.
  4. Add enough mayonnaise to coat the potatoes.
  5. Season and snip the chives in, mix in.

Handy Hint

Instead of mayonnaise, use vinaigratte made with 2:1 olive oil to balsamic vinegar plus a tsp of dijon mustard to ring the changes (I prefer this version but kids seem to like the mayonnaise)
