  • 570ml milk

  • 1 handful cheddar grated

  • 2 tbsp flour

  • 1 sweet potato

  • 1 piece skinless and boneless plaice

  • 1 piece smoked haddock

  • 1 bay leaves

  • 3 medium potatoes

  • 100g baby spinach

  • 1 tbsp butter

  • 1 handful gruyère cheese grated


  1. Place the fish in a non-metal mixing bowl with a little milk, the bay leaf, a knob of butter and some ground black pepper.
  2. Cover and put in the microwave for approx 4-5 minutes, until the fish flakes easily.
  3. Boil the potatoes and the sweet potato and once cooked, mash together with a little of the milk milk and a knob of butter.
  4. Steam the spinach until tender and then blend.
  5. Now make your cheese sauce; melt a knob of butter then add the flour until it makes a paste. Gradually add the milk over a low heat and stir until it thickens, add the cheese. Once you have the consistency you want, add the blended spinach and mix thoroughly.
  6. Remove the bay leaf from the fish, drain any excess milk, add the spinach and cheese sauce and stir together with the flaked fish.
  7. Put the fish into a dish or individual ramekins and spread the mashed potato over the fish mixture.
  8. Brown the top under the grill, if you like the top slightly crispy.
