  • 250ml boiling water

  • 1-2 tbsp sesame oil

  • 1-2 tbsp soy sauce

  • 1 handful prawns optional

  • 1 carrot cut into fine strips

  • 1 tbsp Thai fish sauce optional

  • 1 handful vegetables cooked, eg: peas or sweetcorn

  • 1 tbsp vegetable boullion reduced salt

  • 1 bag instant noodles

  • 3 broccoli florets or finely shredded savoy cabbage


  1. Put water in a pan and add the broccoli and carrots. Put lid on and simmer for about 3 mins.
  2. Add all bouillon, soy sauce, sesame oil and Thai sauce (optional) and stir until mixed in well.
  3. Add the noodles and any of the other smaller veg. Cook for a further 2 mins or until the noodles are just cooked.
  4. Add the prawns (optional) and cook for a further minute.

Handy Hint

You can add more boiling water if you prefer it more soupy, or keep it fairly dry to make it easier for small children to manage. If you add more water, you may want to add a bit more seasoning. This also works really well as a chicken version by making stock from left over roast chicken and leaving out the vegetable bouillon.

    You can adjust the ingredients really easily in this recipe according to what you and your family like to eat. It can be vegan, vegetarian or a fish or chicken version.
