Moroccan vegetable tagine

  • 200g onion

  • 2 tsp cinnamon

  • 200g potato

  • 1 tin tomato

  • 200g sweet potato

  • 200g courgette

  • 1 tsp paprika

  • 1 tsp harissa paste (to taste)

  • 2 tsp cumin

  • 1 bunch coriander finely chopped

  • 1 tin chickpeas

  • 50g dried apricots chopped

  • 200g carrot

  • 50g raisins


  1. Chop all the veg up into big chunks and sweat them in some olive oil for 5 minutes or so before putting them in a big casserole pot with the chickpeas, dried spices, dried fruit and two cups of water.
  2. Cook in a hot oven (180-200C) for 30 minutes, with the lid on. Remove pot, add the tinned tomatoes, and cook for another 20 minutes without the lid on in the oven.
  3. When all the veg are cooked through and the sauce is thick and bubbling, add the chopped coriander and serve with lots of couscous. This is meant to be a very saucy dish so don't worry if it looks very liquidy.

Handy Hint

Chunks of braised lamb can also be added.

    Yum! This is a great recipe. I sweated the veg a bit too before putting the tomatoes in and putting it in the oven and it turned out lovely. DS loves it, he was thrilled to find the raisins and apricots! I'm making double next time, as it freezes really well too and makes a great quick meal as you just need to heat it and do some cous cous. Perfect!

    Lovely flavour, but either the veg need to be sweated a bit before going into the casserole dish or the cooking time needs to be increased - I cooked this last night following the recipe exactly & the veg were still rather crunchy!

    This is the nicest recipe! Sooo moreish. I decided to sweat the veg in oil for a little before putting the water in and it was delicious. DDs wolfed it down (two nights in a row - unheard of)
