Banana and custard cream cookies

  • 1 egg yolk lightly beaten

  • 225g icing sugar

  • 2 tsp vanilla extract

  • 3 drops vanilla extract

  • 140g caster sugar

  • 2 tbsp milk

  • 1 pinch salt

  • 100g dried banana finely chopped

  • 175g plain flour

  • 115g custard

  • 225g butter softened

  • 25g butter

  • 250g butter


  1. Place 225g of butter (reserving 25g for the custard cream filling) and sugar in a large bowl and beat together until light and fluffy.
  2. Beat in the egg yolk and vanilla extract.
  3. Sift together the flour, custard powder and salt into the mixture.
  4. Add the bananas and stir until well combined.
  5. Halve the dough, shape into 2 balls, wrap in cling film and refrigerate for 30-60 minutes.
  6. Preheat the oven to 190C/Gas Mark 5.
  7. Line 2 large baking sheets with baking paper.
  8. Unwrap the dough and roll out between 2 sheets of baking paper, cut out the cookies and place them on the baking sheets, spaced well apart.
  9. Bake for 10-15 minutes or until light golden brown, leave to cool on the baking sheets for 5-10 minutes then transfer to wire racks to cool completely.
  10. To make the custard cream, place the remaining butter in a small saucepan and heat gently until melted.
  11. Remove from the heat, and sift in the icing sugar, then add the milk and vanilla and beat until smooth and thoroughly combined.
  12. Spread the custard cream over a cookie and top with another one.

    The kids loved them, they enjoyed twisting them apart and licking the cream from the middle.
