1 tbsp olive oil
1 block halloumi
4 pitta breads
1 handful frozen Mediterranean vegetables
- Pan cook the vegetables with a little oil for 10 minutes.
- Slice the halloumi and place under a medium grill for 5 minutes. Turn whilst cooking.
- Place the pita breads in a toaster for 2 minutes.
- Slice open the pita and add some vegetables and a slice of halloumi cheese.
This makes a quick, yummy lunch.
