Italian sausage casserole

  • 2 onion chopped

  • 1 tbsp tomato puree

  • 2 tins chopped tomato

  • 1 stick celery chopped

  • 1 tsp oregano

  • 1 tbsp pesto

  • 10 sausages (good quality)

  • 2 carrot peeled and chopped

  • 1 tin cannellini beans


  1. Heat a couple of glugs olive oil in a casserole dish.
  2. Add sausages and brown for 5 minutes.
  3. Add all vegetables and cook for further 5 minutes.
  4. Add the chopped tomatoes and tomato puree.
  5. Drain and rinse cannellini beans. Add to pan.
  6. Add the oregano.
  7. Put in a casserole dish in oven and cook for 45 minutes.
  8. When ready to serve add 1 tbsp pesto. Serve with pasta or salad.

Handy Hint

You can keep sausages whole or cut up into bite-size pieces for kids.

    What temp should the oven be on? I guessed at 190 C.

    sorry guys didnt even notice that you are supposed to specify nuts or nut free! but you could make this without pesto and just add more oregano or put a few basil leaves in when cooked to keep the italian flavour.

    This was very tasty and super easy, a brilliant quick and hearty supper, especially as the weather turns colder.

    Yes most commercial pesto sauces contain cashew. I know someone with allergies would check the label but if it was made for someone else, they could assume from this recipe that pesto is not a problem IYSWIM I made it last night and it was lovely.

    I'm pretty sure pine nuts are actually seeds, not nuts (have researched this as we have peanut allergy in the family). Although pesto can often contain cashew nuts or other nuts, so always worth checking the label.

    Pesto is made with pine nuts unless it is a weird "alternative" version.

    It looks a lovely recipe and will definitely try, but it says there is no nuts in it, but contains pesto which does often contain nuts.

    oven should be on 200.Could use your casserole lid if prefer but I like my sausages a bit crispy!
