Boiled fruit cake

  • 170g brown sugar

  • 1.5 tsp baking powder

  • 1 pinch salt

  • 1 tsp cinnamon

  • 120g wholemeal flour

  • 240ml water

  • 4 tbsp sherry

  • 85g currants

  • 170g sultanas

  • 120g plain flour

  • 115g butter

  • 55g dates chopped (or whatever dried fruit you have knocking around eg apricots, figs etc)


  1. Preheat the oven to 180C.
  2. Put water, dried fruit, salt, sugar and butter in a pan and bring to the boil, then simmer for 20 minutes. Allow to cool.
  3. When you have a minute, add the dry ingredients and the sherry.
  4. Fling in the oven for 45 minutes at 180C and a further 15 minutes at 160C (maybe a little less, depending on the oven - keep an eye on it).
  5. Remove and cool.

Handy Hint

When the fruit has boiled, you can leave it for half and hour or for half a day before adding the rest, it doesn't matter a jot.

    This is the world's easiest fruit cake. Apologies for the imperial measurements - haven't the energy required to work out the equivalents at the moment. Could be made dairy free by substituting butter for a non-dairy alternative.
