  • 1 onion peeled and chopped

  • 300g potato peeled and diced

  • 1/2 pints chicken stock or water

  • 1 orange zested

  • 1/2 lemon juiced

  • 1 small leek washed and sliced

  • 1/2 pints full-fat milk

  • 400g cod fillet skinned and boned


  1. Fry the onion and leek in some olive oil, then add potatoes and stir.
  2. Add milk and stock, bring to boil and cook until potatoes are tender.
  3. Add cod and simmer for 15 mins so flesh flakes. Season if required.
  4. Add lemon juice and orange zest.

    Yum. Very warming on a cold winter's night. Renamed it 'North Pole Chowder' and it went down a storm. Made it with soya milk for dairy free, and it was surprisingly good.
