  • 1 onion

  • 1 potato peeled and chopped into cubes

  • 450ml chicken stock (or vegetable stock)

  • 400ml coconut milk

  • 1 chilli (optional)

  • 3 sweet potatoes peeled and chopped into cubes (large)


  1. Peel and chop sweet potato and onion and sweat in a pan for 5-7 minutes until the onion is transparent.
  2. Add the chopped potato and enough stock to cover all veg and bring to boil.
  3. Boil until potatoes are cooked (keep an eye on the stock levels and add more if necessary - it doesn't need to stay above the level of the veg, there just has to be enough to ensure the pot doesn't boil dry).
  4. Once cooked, blitz the potatoes and onions, and add coconut milk to taste (I usually make a stock pot full and add a full can of coconut milk).

Handy Hint

This is quite sweet so kids absolutely love it. If you add chilli (I use the dried flakes) when you add the plain potato it just adds a bit of a kick that adults love. Makes a posh yet very easy starter if you're entertaining. To balance up the sweetness for adults just adjust the proportions of potatoes as necessary.

This freezes really well so I usually make and batch it.
