Cheesy leek and mushroom bake

  • 1oz cheddar

  • 1 leek sliced (large)

  • 2oz fresh wholemeal breadcrumb

  • 1 pinch mixed herbs

  • 2 tsp margarine

  • 4oz cottage cheese

  • 8oz mushrooms (chopped)


  1. Melt margarine in saucepan, add mushrooms and leeks and stir-fry until soft.Add seasoning and herbs.
  2. Place half the mushroom and leek mixture in a oven-proof dish, spread the cottage cheese over the mixture.
  3. Cover with rest of vegetable mixture.
  4. Mix the cheese and breadcrumbs together and sprinkle over the top, and cook in pre-heated oven at 190C or Gas 5 for 20 minutes. Serve with salad, or jacket potato and vegetables.

Handy Hint

Put on baking tray in oven in case the mixture spills out of the dish.

    I adapted this recipe and used red pepper, butternut squash as well as leek and mushroom. Also used creme fraiche instead of cottage cheese. It was delicious! So quick and easy but full of taste. thank you for the recipe -appreciate it's been a while since it was posted

    Great as a quick nutritious meal for adults, but my toddler was not keen. I added a courgette which was nice.
