  • 1/2 onion

  • 2 tbsp olive oil

  • 3 tbsp sugar

  • 2 cloves garlic crushed

  • 1 scotch bonnet pepper

  • 10 tomatoes (ripe)


  1. Grill all the tomatoes until they have burnt black skin on the outside
  2. Discard the skin and mash the tomatoes all together in a bowl.
  3. Fry onions, garlic and scotch bonnet together in heated olive oil until well browned.
  4. Add the tomatoes and sugar.
  5. Serve with pitta bread or naan.

Handy Hint

Make sure onions are well browned before adding to tomatoes.

    A wonderful and unique vegetarian meal. Healthy and easy to make. Kids love it for its sweet taste and colourful red colour. Orginally from India cusine.
