  • 50g flour

  • 2 chicken breast

  • 1 eggs

  • 1 tbsp mixed herbs

  • 50g breadcrumbs

  • 50g Parmesan

  • 50g Parmesan

  1. Lay the chicken breasts between two large bits of cling-film. Whack with a rolling pin or similar to flatten them.
  2. Cut the chicken into finger shapes, about 5cm wide. Get three plates ready, one with flour, one with egg and one with breadcrumbs on.
  3. Grate a bit of Parmesan and add some herbs to the breadcrumbs.
  4. Dip the chicken in the flour, then the egg and then the breadcrumbs.
  5. Shallow fry in a pan in some vegetable oil. Serve with ketchup, mayonnaise or just a squeeze of lemon juice.

Handy Hint

You can cook them in oven but they are a bit dry.

can also be baked in oven - we make these regularly at home, i bang them onto a tray with oven chips or put potatoes into bake in advance. kids love to help make the goujons, needless to say - especially if you whizz up fresh breadcrumbs in the food processor!
