Slow cooker cheats goulash

  • 1 pinch flour

  • 280ml vegetable stock

  • 1 tbsp tomato ketchup (or Worcestershire sauce - optional and to taste)

  • 1 large courgette sliced

  • 1 pepper de-seeded and sliced

  • 1 pinch paprika (to taste)

  • 500g tomato sauce

  • 1 pinch tarragon (to taste)

  • 2 onions peeled and sliced

  • 3 tbsp cream

  • 6 mushrooms quartered

  • 800g casserole beef diced


  1. Coat beef in spices and flour and brown for 2 minutes in a pan.
  2. Add onions and fry for a further 2 minutes, then add all the other ingredients except cream and bring to the boil.
  3. Transfer to a slow cooker on a low setting for 7-9 hours. Add the cream before serving, if you are heating this up for an evening meal, heat casserole and then add cream.
  4. Goes well with rice, or roast/jacket potatoes.

Handy Hint

Go quite heavy with the spices as slow cookers can 'bland things out'. I add salt and pepper and saffron to my flour, then add tarragon, paprika etc to the stock. Long-life cream, single or double can be used just vary the quatities. This is more like a rich ragu than a casserole as it is quite wet.

    Recipe for SLOW COOKER: a winter warmer. very easy on the pocket as cheap sauces and cuts of meat actually work better
