Orange salsa tagliatelle

  • 1 handful cheddar

  • 1 green chilli finely chopped

  • 8 large tomatoes

  • 1 clove garlic crushed

  • 1 handful fresh coriander

  • 2 oranges

  • 300g tagliatelle (or any large flat pasta)

  • 6 spring onions sliced


  1. Skin and roughly chop the tomatoes.
  2. Stir fry the garlic, onions and chilli for around one minute.
  3. Add the tomatoes and the juice of two oranges and reduce, stirring until it becomes a semi-smooth sauce. Meanwhile cook the pasta.
  4. Add the pasta to the pan and stir through.
  5. Season and top with the cheese and coriander when serving.

Handy Hint

To make skinning the tomatoes easier I put them in a colander over the boiling pasta pot to steam and soften them slightly. If you are short on time it works fine to not bother skinning them at all.

    A really yummy fresh tasting pasta dish, also great to use up tomatoes past their best.
