Ham, cheese and sweetcorn mini-pies

  • 150g sweetcorn drained and washed

  • 4 slices ham or turkey. Sliced into 1 inch strips

  • 1 eggs beaten

  • 1 roll of puff pastry (or flaky if preferred)

  • 120g Gouda or similar cheese. Grated


  1. Mix cheese, ham and sweetcorn together in a bowl with a beaten egg.
  2. Cut out circles from your pastry sheet. I used a water glass or mug because my biscuit cutters were too small. Small pies look cuter but take ages.
  3. Then, with a spoon, place a blob of mixture in the centre of a pastry circle and then top it with another circle. Press round the edges to give a 'pie crust' effect and then snip a 'V' shape into the top with scissors. You should get nine or 10 depending on your cutter size.
  4. Stick them all in the oven at 200C or whatever your pastry recommends. Just keep checking them timewise as small things seem to brown faster and you don't want to end up with black pies. Et voila! Cute mini-pies!

Handy Hint

If you use a smaller cutter it will take longer but will look cuter and more like a canape.

    I make these or variations on these because they use stuff that I always have in the cupboard and its fool-proof. Unless you forget them and burn them, nothing else can go wrong! I feed them to my 15 mo because he likes the flavours, the size and that they are easy to hold. Its easy to freeze them individually and heat them up for lunch. They would probably be quite good in a lunch-box.
