  • 1 onion

  • 1 potato large

  • 1l chicken stock

  • 0.25 chicken

  • 2 leeks

  • 2 carrot small

  • 25g butter


  1. Roughly chop the onion, leeks and carrots.
  2. Melt the butter in a large saucepan and soften the onions and leeks, then add the carrot and potato for a few minutes on a low heat.
  3. Add the chicken portion and the stock and simmer for 45 minutes. Remove the chicken portion and flake the meat into small pieces.
  4. Blend the vegetables and stock and then add the chicken meat back into the pan. Add more or less stock depending on how thick you like it and season to taste.

    The whole family loves this one. I bung it all in the slow cooker first then whizz it up.

    Really enjoyed this soup, made it with leftover chicken from a roast. It was yummy and ds (who usually only eats carrots and peas veg wise) loved it too. I swirled some cream into it a minute before removing from heat too.

    This is such a tasty soup and a good way of hiding veg. DD loves to dunk bread and butter in it.
