Creamy hidden vegetable pasta

  • 1 small pepper de-seeded and chopped

  • 1 tbsp olive oil

  • 1 handful cheddar grated

  • 1 tin chopped tomato (or passata)

  • 1 small carrot chopped

  • 150g pasta

  • 1 tsp Italian dried herbs

  • 1 small onion chopped

  • 1 handful mushrooms


  1. Fry the onion in the oil until soft.
  2. Add the rest of the vegetables and cook for five minutes.
  3. Put the tomatoes, sugar and seasoning into a pan and heat while stirring for 10 minutes.
  4. Meanwhile, cook the pasta according to the instructions on the packet.
  5. Melt the cheese into the sauce.
  6. Blend with a hand blender until smooth, then mix with the pasta and serve.

Handy Hint

The pepper sweetens the sauce but if you don't use it, add a teaspoon of sugar to take away the sharpness of the tomatoes.

    This is a great way of hiding veg for kids. My 4 year old struggles to eat it without the cheese though. It can be eaten by the entire family, grown-ups can take their serving out of the pot before the rest is blended. Great way of getting a dairy serving into non-milk drinking kids too.
