  • 1 yellow pepper chopped

  • 4 tbsp tomato puree

  • 5 tbsp olive oil

  • 2 red onion

  • 1 red pepper chopped

  • 2 courgette chopped into inch squares

  • 1 tbsp dried basil

  • 6 tomatoes chopped into inch squares

  • 7 cloves garlic roughly chopped

  • 1 tbsp oregano

  • 1 aubergine chopped into inch squares

  • 200g feta


  1. Generously salt the chopped up eggplant and leave it on a plate for 15 minutes to ‘sweat.’ This will remove any bitterness.
  2. After the 15 minutes (during which time you’ve been chopping everything else!), rinse the eggplant in cold water.
  3. Combine the vegetables, feta, garlic and tomato paste in a large glass or ceramic baking dish, with all of the elements mixed evenly. Sprinkle oregano, basil, salt & pepper on top.
  4. Pour olive oil over the mixture.
  5. Bake it on a medium high heat (150C or 300F) for an hour, giving it a poke every 20 minutes or so.
    This goes great with a white fish, or on a buffet. Enjoy!

This is Greece’s answer to ratatouille. Serve it as a side to a fish dish, an easy buffet supplement, over pasta, or on its own! It’s quick and easy to prepare, and doesn’t disappoint!

    This was very, very good. So easy to put together but looks and tastes like more effort has gone into it. I served it with baked cod. Best of all ds gobbled it up.

    I made this last night - absolutely delicious! Thanks so much. Two of us scoffed down nearly the whole thing and DH congratulated me on it too! I'd say 10/10 for all.

    150degrees wasn't hot enough in my oven to cook the veg properly. I rebaked it hotter the next day and stirred it into pasta.
