  • 1 tbsp curry powder (or mild curry paste)

  • 2 tbsp crunchy peanut butter

  • 1/2 lime juiced

  • 400ml coconut milk

  • 1 chilli small. Finely chopped, including seeds

  • 1 tbsp sunflower oil

  • 1 splash soy sauce

  • 1 small birds eye chilli finely chopped, including seeds

  • 3 cloves garlic crushed

  • 1 bunch coriander chopped

  • 500g chestnut mushrooms finely diced


  1. Heat oil in a large frying pan and cook mushrooms until all liquid has evaporated. Stir briskly while cooking.
  2. Add chilli and garlic and stir for a minute.
  3. Add curry powder or paste and peanut butter, stir thoroughly then add the coconut milk.
  4. Let it all bubble rapidly and stir occasionally until thick and reduced; about 30 minutes.
  5. Add lime juice, coriander and soy sauce to taste.
