Chicken and couscous salad

  • 2 chicken breast steamed or grilled

  • 1 courgette grated

  • 1 lemon juice and zest

  • 1 1/4 inch ginger grated

  • 1 large carrot grated

  • 225g couscous

  • 1 peppers (red and yellow) halved


  1. Soak couscous as per packet instructions.
  2. Add the lemon juice, zest and ginger.
  3. Mix courgette and carrots in with couscous.
  4. Grill and skin peppers, then chop and add to the cous cous and veg mixture.
  5. Chop cooled chicken breasts and stir through the couscous.
  6. Serve chilled.

Handy Hint

My children like to take this salad as an alternative to sandwiches for packed lunch. Alternatively serve with salad leaves and pitta pockets.
