Lemon and courgette soup

  • 1 onion chopped

  • 2 tbsp olive oil

  • 800ml vegetable stock

  • 900g courgette chopped

  • 1 unwaxed lemons zested and juiced

  • 25g butter


  1. Heat oil and butter in a large saucepan. Add the garlic, onion and courgettes and saute for 10 minutes on a medium heat, without browning.
  2. Add stock and seasoning and bring to the boil, then turn down the heat and simmer for 10 minutes.
  3. Blitz with a hand held blender until smooth.
  4. Add lemon juice and zest and stir through.

Handy Hint

I tend to double the ingredients and then freeze.
It's delicious, low fat and really filling.
