BBQ Moroccan lamb

  • 3 tbsp olive oil

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1 tsp ground ginger

  • 2 tsp ground coriander

  • 1 leg of lamb

  • 2 handfuls coriander chopped

  • 1 handful mint chopped

  • 1/2 tsp chilli powder


  1. Cut the bone out of the lamb (you can ask the butcher to do this) and lay in a large roasting tin.
  2. Mix all the ingredients together and spread over the lamb, making sure it is well rubbed in. You can do this in advance and let it marinade in the fridge over night.
  3. Cook on a moderate heat for 1 1/2 hours in the oven.
  4. About 15 mins before you are ready to serve, put the lamb on the barbecue to give it that smoky taste.

    It should feed about 8, but its that good, but once people know how good it is, they take at least 3 portions each!
