  • 1 onion sliced

  • 1 tsp cinnamon

  • 2 tsp ginger or ginger paste

  • 1 whole chicken

  • 1 tbsp honey

  • 600ml stock

  • 1 tsp ground turmeric

  • 2 lemons quartered

  • 180g olives stoned black olives


  1. Mix together turmeric, cinnamon, salt and pepper and rub onto the outside of the chicken.
  2. Heat some oil in a pan and brown the chicken on all sides, then put it in a casserole pot.
  3. Next fry the sliced onion and add ginger paste or some grated ginger.
  4. When softened, tip in stock and bring to the boil. Tip into the casserole pot and transfer the pot to the oven (heat 190C).
  5. After 30 minutes, add the lemons, a cupful of olives and a tablespoon of honey to the pot. Put back in the oven for another 45 minutes.
  6. Serve with rice or couscous.
