Leek and bacon rice

  • 1/2 pints chicken stock

  • 1 handful basmati rice

  • 2 leeks chopped

  • 4 slices smoky bacon chopped

  • 1 pinch all spice


  1. Fry the leeks and bacon in some oil in an oven proof pan with a lid until the leeks start to go soft.
  2. Add the allspice and rice and mix.
  3. Add enough stock to cover the rice mixture.
  4. Cook in the oven for 20 minutes.

Handy Hint

This is enough to make a small meal for 2 people. I add some cooked smoked fish to bulk it out, or serve it with fish fingers!
