Chicken and whatever-you-fancy pie

  • 1 onion chopped (or use leeks or spring onions)

  • 150ml milk or cream

  • 50g flour

  • 1 chicken cooked

  • 2 slices bacon chopped (optional)

  • 1 pint stock

  • 1 pinch oregano (or whatever herbs you like, to taste)

  • 50g butter

  • 1 bowl mashed potatoes, sliced potatoes or pastry (to top)


  1. Melt the butter, add onions or leeks or spring onions and bacon if using. Fry for a few minutes.
  2. Add flour slowly and mix well until it forms a paste, and cook for a few minutes. Make sure the butter doesn't burn at any stage.
  3. Slowly add stock and mix well, the slower you add and mix each bit, the less likely you are to have a lumpy sauce.
  4. When all the stock has been added, put in the milk or cream and bring to the boil, then turn down until the consistency you want.
  5. Stir in the chicken and whatever you fancy.
  6. Put into a pie dish and cover with pastry or sliced potatoes or mashed potatoes and bake in the oven until the topping is cooked and it's looking yummy.
  7. Serve with whatever you fancy!

Handy Hint

Mix the flour in well and the stock in slowly, it'll really make a difference.

    Just the ticket, needed inspiration for some chicken and leeks I had to use up. I chucked in pasta instead of pastry lid. Yummy, thank you.
