  • 1/2 pints milk

  • 4 chicken breast

  • 100g cheese grated

  • 450g fresh spinach (or 225g frozen spinach)

  • 1 bay leaves

  • 4 handfuls tagliatelle (to serve)

  • 25g plain flour

  • 50g butter

  • 1 small onion quartered


  1. Pop the chicken breasts in a pan with the bay leaf and onion and pour in 1/4 pint of water, bring to the boil then immediately turn down the heat and simmer gently for about 20 minutes.
  2. Meanwhile whisk together the milk, flour and half of the butter over a medium heat to form the sauce.
  3. Melt the rest of the butter in a pan and toss the spinach in it, then put this in the bottom of an oven-proof dish. Cut the chicken into chunks and pop on top of the spinach. Mix 75g of the cheese into the sauce and pour over the top of the chicken, sprinkle the rest of the cheese over the top and bake in the oven at 190C for about 15 minutes.
  4. Serve with the tagliatelle.

Handy Hint

A jar of lasagne white sauce works just as well if you dont fancy making the sauce.
