Onion cream tart

  • 1 egg yolk

  • 1 onion

  • 2 tbsp oil

  • 4 tbsp double cream

  • 1 eggs

  • 1 tin anchovies

  • 1 clove garlic

  • 12 green olives stoned

  • 30g butter


  1. Peel and slice onions finely and put them in with the heated butter and oil in a saucepan.
  2. Cook them very slowly with the lid on until they are golden.
  3. Add the crushed garlic half way through the cooking which may take up to an hour.
  4. Line a buttered 7” flan dish with the pastry and prick the bottom with a fork.
  5. Remove onions from heat and add the eggs, which you will have beaten with the cream and seasoning.
  6. Mix together then pour the lot into the flan case. Arrange anchovies and olives in criss cross fashion on top.
  7. Place on a baking sheet and bake in centre of a fairly hot oven for 30 mins.
  8. Serve with salad and nice bread. Or very good cold for sophisticated picnic fare.

Handy Hint

Don't stay in the house with one of these on your own. Totally impossible to stop at one slice.
