  • 1 onion

  • 1 tsp ginger grated

  • 1 chicken

  • 400g coconut milk

  • 2 tsp curry paste (as mild or strong as your family will eat)

  • 1 clove garlic

  • 300g vegetables eg pepper, mushroom, carrot

  • 300g dried egg noodles


  1. Finely shred all the veg and the chicken if using.
  2. Stir fry the onion and chicken with some garlic paste and ginger.
  3. Add the veg. Once it's softened, add 2 tsp of curry paste.
  4. Add half a tin of coconut milk and boil.
    5.Taste and adjust seasoning - more curry paste for extra spice, more coconut milk if you need to tone it down.
  5. Soak the noodles in hot water following the directions on the packet, and add to curry.

Handy Hint

Bibs for anyone who might need them - the sauce is messy!

    My dcs (1 and 3.5) adore this - it's a great introduction to different flavours and you can adjust the seasoning as they get older. And it works as a lunch for adults too.
