Banana breakfast bread

  • 1 tsp bicarbonate of soda

  • 115g dark brown sugar

  • 2 eggs beaten

  • 250g plain flour

  • 115g butter

  • 1 pinch salt

  • 500g bananas over-ripe, mashed


  1. Preheat the oven to 180C/Gas Mark 4. Lightly grease a 23x13cm loaf tin.
  2. Mix together flour, bicarbonate of soda and salt.
  3. In a separate bowl, cream together butter and brown sugar. Mix in eggs and mashed bananas.
  4. Stir banana mixture into flour mixture.
  5. Pour mixture into loaf tin. Bake in preheated oven for 60-65 minutes. Leave to cool for 10 minutes before turning out onto a wire cooling rack.

    Looks like a nice recipe. But why call a recipe that needs at least 1 hr 20 mins from start to finish "breakfast" bread. Like we all have that much time in the morning to make bread right [hmm]

    This easy banana bread is perfect for breakfast or picnics. Can be toasted and delicious served with cream cheese.
