  • 2 tsp vanilla extract

  • 200g dark chocolate broken into pieces

  • 200g unsalted butter

  • 150g white chocolate broken into pieces

  • 3 medium eggs

  • 300g granulated sugar

  • 125g plain flour


  1. Preheat the oven to 180C/160C fan and grease and line a rectangular baking tin (approx 20cm x 30cm) 3-4cm deep with greaseproof or parchment paper.
  2. Melt the butter and dark chocolate in a bowl over a pan of simmering water.
  3. With an electric hand whisk, beat together the eggs, sugar and vanilla until they're thick and creamy.
  4. Mix in the melted chocolate and butter.
  5. Stir in the flour and white chocolate.
  6. Pour in to the baking tin and cook for 25 minutes until the top is cracking and the centre is just set.
  7. Leave to cool in the tin for 30 minutes before turning out on to a board lined with greaseproof paper to cool completely.

Handy Hint

If you turn the oven off but leave the brownies in there while it cools they turn out lovely.
