Citrus marscapone cheese cake

  • 4oz icing sugar

  • 500g mascarpone cheese

  • 1 orange

  • 1 lemon

  • 2oz melted butter

  • 1 packet of ginger biscuits

  • 2 limes zested and juiced


  1. Crush the ginger biscuits into finest bread crumbs and add the melted butter.
  2. Press the mixture into a loose bottomed cake tin about 8inch wide. Then leave in the fridge for at least 1/2 an hour.
  3. In the meantime, put both tubs of cheese into a mixing bowl and add the icing sugar, along with your chosen zest & juice. Mix the whole lot together and spread on top of the biscuit base.

Chill for one hour before serving.

    Although the overall prep time is 1 hour, most of that is chilling time. This can be made in 10 mins.
