Winter stew with chicken

  • 1 onion

  • 1 tbsp tomato puree

  • 1 tin chopped tomato

  • 2 tsp dried thyme

  • 1 chicken stock cube dissolved in 1 pint of boiling water

  • 2 cloves garlic

  • 4 large potatoes 1 diced finely and the others peeled and chopped

  • 3 carrot roughly chopped

  • 4 skinless chicken breast

  • 1 sprig fresh rosemary (or 2 tsp dried rosemary)

  • 130g frozen peas


  1. Chop the chicken into chunks and fry in olive oil in a heavy bottomed saucepan until the meat is sealed.
  2. Sprinkle on the herbs, chop the onions and garlic and fry until soft.
  3. Chuck everything else in, cover with a lid and simmer for about 2-3 hours.
  4. Serve with chunks of crusty buttered bread.

    Nice recipe that is fairly easy to prepare, a lovely winter chicken dish.

    Preparation time is minimum all the time is in the cooking- this is what makes the stew so tasty and the chicken lovely and tender- my 2yr old loves it! You can bulk it up with extra tomatoes and veg to make it last longer so its a time saver and thrifty!!
