  • 225g self-raising flour

  • 170g sugar

  • 2 eggs

  • 115g butter

  • 3 banana

  1. Mash bananas in your largest mixing bowl.
  2. In a separate bowl, mix butter with sugar until smooth, then add eggs.
  3. Mix both mixtures together then add the flour.
  4. Put in cake tin and bake at 180C for about 50 minutes until golden brown.

Handy Hint

If you don't have self raising flour, use plain flour and add 3 tsps of baking powder. You can also add raisins, walnuts, honey, or whatever you fancy to the cake to make it even yummier…

Tried this yesterday, second attempt as my first cake tin was too shallow - bloomin gorgeous! I added dates soaked in rum, crushed almonds, vanilla essence, and chocolate chips. Yes I'm a pig, but yes it worked :) thank you

Made this with 150g sugar (50/50 caster and muscovado) and threw in two handfuls of sultanas. DP took it to work and got rave reviews.

Just made this recipe, best cake I've ever made! Light fluffy tasty and made from leftover stuff round the house and some bananas no one would eat!! Thoroughly recommended x

Made it today for first time and was lovely and fluffy and moist. Great for when you have those bananas that no one will eat!!
