  • 1 onion

  • 1 tbsp olive oil

  • 400g passata/tinned tomatoes

  • 4 handfuls pasta

  • 1 handful red split lentils

  • 1 handful mixed vegetables eg peppers, mushrooms, sweetcorn, spinach

  • 1 pinch fresh herbs


  1. Chop the onion and fry until soft.
  2. Chop the vegetables and add to onion mixture for a few minutes until softened.
  3. Add passata or tin of tomatoes, bring to the boil and leave to simmer and thicken for 20 minutes.
  4. Meanwhile cook the lentils according to instructions, then drain. When tomato mixture is thickened, add lentils.
  5. Cook the pasta and add to sauce - top with cheese.
