  • 1 tsp curry powder

  • 3 slices ham

  • 1 handful sultanas

  • 3 sultanas sliced into rings

  • 4 spring onions

  • 200g brown rice (dry weight)

  • 2 tbsp low fat mayonnaise

  • 2 mushrooms


  1. Boil the rice with the sultanas and curry powder for 20-25 minutes.
  2. Chop the remaining ingredients and place in large bowl.
  3. When cooked, drain rice and mix with other ingredients in bowl.
  4. Add mayonnaise to bind.

Handy Hint

Use any ingredients you like - prawns instead of ham works well, for instance.
A nice side dish for chicken, fish, BBQs etc. Makes rice more tasty and interesting.

    A nice sidedish for chicken, fish, BBQs etc. Makes rice much more tasty and interesting.
