  • 1 handful chicken cooked, chopped

  • 1 handful reduced fat cheddar cheese shredded

  • 1 handful carrot grated

  • 4 mini wholewheat pitta breads split

  • 1 tbsp barbecue sauce

  • 130g frozen corn defrosted


  1. Preheat the oven to 180C.
  2. Place the split pittas on a baking sheet.
  3. Put chicken, carrot, corn, and barbecue sauce in a mixing bowl and stir to combine.
  4. Spoon 2 tablespoons of chicken mixture onto each pita.
  5. Sprinkle 1 tablespoon of cheese on top of each, and bake until the cheese is bubbly, about 8 minutes.
