Pasta with mozzarella and tomatoes

  • 1 tbsp olive oil

  • 1 tbsp pesto

  • 250g fresh tomatoes

  • 1 ball mozzarella

  • 400g penne pasta or fusilli pasta

  • 1 handful fresh basil chopped (optional)


  1. Cook pasta according to instructions.
  2. While it's cooking, chop the tomatoes and mozzarella into small chunks. Put into a large bowl with the basil (if using) oil and pesto and mix.
  3. Drain the pasta and mix into the tomato/mozzarella mix. Serve immediately.

Handy Hint

Add chopped fried salami/bacon/ham or even chorizo for meat eaters.
Great cold too as salad for picnic or BBQ.
