Italian-style pork chops

  • 1 onion

  • 1 tbsp olive oil

  • 150ml chicken stock

  • 1 tin chopped tomato

  • 1 lemon zested

  • 4 lean pork chops

  • 1 tbsp rosemary chopped

  • 2 cloves garlic

  • 1/4 tsp dried chilli flakes


1.Trim excess fat from the chops. Heat the oil in a large frying pan. Arrange chops in in pan in single layer and cook for 2 mins on each side until brown, transfer them to a plate.

  1. Peel and finely chop onion, add to pan and cook, stirring frequently for 5 mins. Peel and crush the garlic add to the pan along with rosemary grated lemon rind and crushed chillies. Cook, stirring occasionally for 1 min.
  2. Reduce heat to low and return the chops to the pan. Add the stock and tomatoes. Simmer for 10-15 mins or until chops are no longer pink in the centre and the sauce is slightly thickened. Remove from heat, season with salt and pepper and serve.
