  • 1 onion chopped

  • 2 handfuls chicken cooked and chopped

  • 500ml stock (can be from cooking the chicken if you have it or just use a stock cube)

  • 3-4 sticks celery chopped

  • 1 clove garlic

  • 1 tsp cornflour

  • 4-5 carrot chopped

  • 1 tbsp butter


  1. Saute the vegetables gently in butter for a few minutes.
  2. Add the stock, about 1/4 to 1/2 pint depending on the quantity of veg, and simmer gently with the lid on until the veg is nice and soft.
  3. Thicken with cornflour; mix a tsp or so with some cold water, then add this and stir until thickened. Add a bit more if you need to or want to.
  4. Add chicken and heat through thoroughly.
  5. Serve with boiled rice.

Handy Hint

This is a good way of using leftover meat from a roast dinner. I do a whole chicken in a slow cooker, strip the carcass and use about half for this recipe. Other vegetables can be used, tinned sweetcorn works quite well. When feeling very lazy I use frozen mixed veg.
