Apricot biscuit fudge

  • 80g brown sugar

  • 1 handful desiccated coconut

  • 250g biscuits crushed

  • 225g dried apricots roughly chopped

  • 100g butter

  • 200g sweetened condensed milk


  1. Melt together butter, sugar and condensed milk.
  2. Remove from heat and add crushed bisuits and apricots.
  3. Mix thoroughly and press into a 20cm square tin and sprinkle with coconut.
  4. Cut into squares and refrigerate.
