  • 250ml milk

  • 100g cheddar grated

  • 450g potato sliced into coins

  • 2 eggs

  • 1/2 cauliflower broken into small florets

  • 1 1/2 cauliflower

  • 200g carrot sliced

  • 100g Greek yoghurt

  • 50g mushrooms sliced


  1. Put layers of potato, cauliflower, carrot, mushroom, beans and cheese into a casserole dish, repeating until all vegetables are used up and finishing with a layer of cheese.
  2. Beat the eggs with the milk and pour over the vegetables.
  3. Cook for 1.5 hours in the oven on a low heat until set and golden brown.
