  • 1 chicken breast (per person)

  • 1 jar mango chutney

  • 1 tin low fat coconut milk


  1. Line a roasting tin with a couple of layers of foil.
  2. Throw in a chicken breast or two per person (depending on how hungry you are).
  3. In a bowl, mix mango chutney and coconut milk.
  4. Chuck mix over chicken, pop in oven (220C for an electric oven)and cook until chicken cooked through - about 35 minutes - basting occasionally.

Handy Hint

Serve with potato wedges and greens - rice and pasta taste really wrong with this!
