  • 2 tbsp brown sugar

  • 230ml tomato ketchup

  • 2 tbsp honey

  • 1 splash sesame oil

  • 2 tbsp dark soy sauce

  • 1 splash fish sauce

  • 1 red chilli diced finely


  1. In a large bowl (all amounts are approximate) squeeze a good amount of ketchup, about a cup full.
  2. Add a dash of fish sauce, a good amount of honey, about 1/3 of a cup, 2 tablespoons of brown sugar, a really good glug of dark soy, maybe 2 tablespoons (you can always add more, but too much makes it too salty). Also, add a teaspoon of chopped red chilli (you can use the ready chopped chillis for ease) and a dash of sesame oil.
  3. Mix well, then add strips of chicken or beef, mix and leave covered and refrigerated for at least 4 hours or overnight is better (but you can get away with less).

Handy Hint

I can't be too specific with quantities, this was a recipe of my late Grandmother (Zena) that I accidentally replicated when messing around with a marinade.

Also, you can tweak it and adapt it yourself according to how hot you want it or how sweet, and how much meat/chicken you are using. You can drizzle this over chicken pieces , roast them and then deglaze the pan with some boiling water and you have a lovely sauce/gravy.

    This is the tastiest marinade I have ever made, would be glorious for ribs too. Endless variations on this theme, depending on how much chilli, or soy or honey.
