Cauliflower cheese

  • 1 splash double cream

  • 2 tbsp cream cheese

  • 1 large cauliflower

  • 1 handful cheese

  • 1 pinch cumin

  • 130g pancetta

  • 1 tbsp English mustard


  1. Boil or steam the cauliflower florets until tender. Drain well and sprinkle with a light dusting of cumin powder.
  2. Whilst the cauliflower is cooking, fry the pancetta cubes until they're crispy. Add to the drained cauliflower.
  3. In a jug, mix together double cream, cream cheese, grated cheese and a blob of english mustard. Add a bit of black pepper of you like.
  4. Mix the cauliflower and the cheese sauce together and transfer to an ovenproof dish.
  5. Cook under a hot grill until brown and bubbly on top.
  6. Serve with green salad or chopped cabbage and leeks.

    A-MAZE-ING. This was delicious - can't wait to have it again! I was worried the cheese sauce bit was to thick (it was the consistency of buttercream icing if not thicker when I did it), but it melted into perfection!
